A Kapampangan Fare

Buro, or fermented rice  is my favorite Kapampangan dish. It was not love at first sight for me– it smells and has peculiar taste, but grows on you. Pair it with mustasa, and grilled fish, and you have the perfect combo. Another favorite  is the sisig. 

I love Filipino food, in general, but Kapampangan food is quite special because of the extra effort, and the patience to put into it.  They really take pride in their cooking. 

We had Kapampangan food for breakfast in Umagang Kay Ganda.  It was WOW.  I give it a 5! 

Here are some of the dishes that are worth trying…

1. HUMBA , P320 
Given my limited Food Vocabulary, I mistook this for adobo.  It’s very garlicky and the pork is so tender. Tito Ariel , Tunying, and I love this. 

2. Sinigang sa Bayabas with Bangus  , P395

 Honestly, I didn’t even get to try the Bangus . The broth is heavenly. Sour with a hint of guava. 

3. Begukan (pork binagoongan) , P299

 This is a complete dish.  Pork, eggplant with bagoong!  It’s the bagoong that spelled all the difference for this one !  How about ordering some green mangoes on the side? 

4. Ensaladang Paco (Fern  Salad )

Paco is paco is paco. I like the dressing, a hint of sweetness and asim. 

5. Chicharon with Atchara 

  Kapampangans eat their Chicharon with atchara! IT’s a good twist!!!!!
